Tonight’s dinner was nice little pork tenderloin seasoned with Hog Heaven Spice mix Anna bought off Amazon. Â Hog Heaven is a mix of fennel pollen and complementary herbs chosen by Pollen Ranch to highlight the sweet flavor of pork.
Recipe:
Preheat over to 350F, convection (fan) preferred, this cooks a little more evenly and a little faster.
1 Pork Tenderloin, about 1 lb
a few pinches of Hog Heaven*
one onion sliced
a couple of small squashes, sliced.
Butterfly the tenderloin, season inside and out, roll to make a fat short piece of meat and tie to keep it together.
Olive oil into a hot (oven safe) pan, add onions and sear all sides of the pork roll – get some good color. Toss the squashes in the pan and into the oven. Â Let it cook til it hits 140ish, pull out and cover loosely with aluminum foil. Â I took the meat out and gave the squash a bit more color (and a touch of salt) in the pan before plating.
It was yummy. Â Should have made more squash and onions. Â The only down side is there isn’t really much to make sauce out of – the tenderloin is pretty lean.
