Gochujang Pork Shoulder (sous vide)

We have been going crazy with a tub of Gochujang that we found at a local Korean market, and we’ve been going crazy with it! This spicy red pepper paste has been growing in popularity in the last few years, however Gochujang may not always be available in your neighborhood store. Luckily, there’s always Amazon to the rescue!

We made this marinated pork shoulder that we cooked sous vide using our Anova Precision Cooker for awesome deliciousness…This makes a lot of marinade! Adapted from a recipe from Epicurious! So delicious…

Marinade:
1/2 cup Mirin
1/2 cup rice wine
1/4 cup vegetable oil
1/4 cup Gochujang paste
1 tbsp honey
12 cloves garlic
2″ ginger

Blend until smooth! I really like using a high powered blender, like the Blendtec TB-621-25 Total Blender Classic with WildSide+ Jar, Black (Certified Refurbished) to get the marinade to a smooth consistency.

Take a 3-5lb pork shoulder, and butterfly the pork shoulder to 3/4″ thick. Trim any excess fat and then put in a vacuum sealed bag together with the marinade.  You will not need to salt this, as there’s plenty of flavor in the marinade already! Let sit in the marinade for 3-4 hours or overnight.

Preheat the Anova Precision Cooker to 135F in a sous vide vessel deep enough to hold the pork shoulder with enough water to cover. Put bag in water bath, using paper clips or some other weight to hold the bag under water. Sous vide for 2-5 hours or until 30 minutes before eating.

Pre-heat cast iron pan over medium high flame until sizzling hot, we usually flick a drop of water and see if this steams immediately. Take the pork shoulder from the marinade and mop as much of it off as possible with paper towels. Sear pork shoulder until crisp. Serve with lettuce and green onion for crunch and flavor.
